You are facing two issues here: in order to recognise a hard drive
when the computer is booting, or to have a disk mounted on the
desktop, the Macintosh requires a small driver on the hard drive.
The second issue is that Apple's HD SC utility will refuse to
recognise the hard drive unless it is approved by Apple.

Something like Mt. Everything will be able to scan the SCSI bus
and tell you if a hard drive is present.  It can even install a
driver but I don't know if it can partion the disk.  I don't know
if the driver is very good either.  But it is free and a good place
to start.

If the software recognises the hard drive, try tracking down a
hacked version of Apple HD SC utilities or something like the FWB
Hard Drive Toolkit.  These will give you the drivers, allow you to
partition the disk, and do many other wonderful things.
