With a 550 l/b, email and UseNet should be fine. Ideally, get an LC-PDS Ethernet card, and access the 'net through a router.

played around on a Performa 5260-120 at a friends house, but only for a few
minutes, so I didn't really get a chance to probe all the goodies that the
Performa had to offer.

When faced with the choice, there are lots of very inexpensive alternatives
for a daily-use-computer. The Color Classic has to be classified as a casual
use Mac in an unmodified condition. Even modifed, you face the tiny screen
without an external monitor adapter.
By the time you do ANY of the modifications, you'll have bought yourself a
nice early iMac capable of doing a lots more, especially the Photoshop
tasks.
Yep - I wouldn't recommend Photoshop on any CC, short of one with a PPC logic board.
But for other things, if cost was an issue, most CC upgrades would never happen.
