As far as connecting from OS X to a System 7.1 peer to peer server goes, I can assure you that it does not work in my environment. This comprises (very summarised):
OS X Mac (10.3.4) connected to hub via utp Cheapo Netgear hub with 10Mbps utp and Thinwire interfaces Gatorbox via utp to hub; the Gatorbox is the only AppleTalk zone seeder SE/30 running enhanced System 7.1 connected to hub via Thinwire
The enhanced System 7.1 SE/30 can read/write files to the OS X Mac. The OS X Mac can see the SE/30 and I can attempt to mount volumes but none appear in the Finder. I'll try it again with the Gatorbox turned off some time; it is possible that the AppleTalk implementation in OS X does not work with my standard Gatorbox router.
