I've not tried using dd on OS X but when a disk is created, does the Finder identify it and try to mount it, unblessing it at the same time? Are there any dd switches on the command to deny Finder mounting/eject? Just trying to get to the cause of the problem...
Reading the man page for dd, there's not a lot of comfort. However what about changing the Finder preferences and turn off mounting "CDs, DVDs and iPods" (which I presume to mean removable media in general) on the desktop.
