I also have a floppy of 'MacTerminal' software. I've not had a chance to use it yet, but looking through the manual it appears to be what you're looking for. I like the ZTerm program that Sean talked about - I've had great luck with it.

ZTerm. I use v0.9 on my SE and use it as the console to my sun systems.
NetBSD's site is a very good resource for making a mini-din (mac) to DB-9
(PC) or DB-25 (various).
