I have no problem running OT 1.1.2 on an SE/30 running 7.1 with 8 megs of RAM.

The SE/30 is going to be a 68030. I don't think you want to try that upgrade even if one exists. System 7.5.1 is fine on any SE/30.
Just to clarify the point, from the OT 1.1.2 Update:
"Open Transport is designed to work on Mac OS-compatible computers with a Motorola 68030 or 68040 family microprocessor, or a PowerPC microprocessor. Open Transport is supported on system software versions 7.1, 7.1.1, 7.1.2, 7.5.3, 7.5.5 or later. System software version 7.5.3 or later is recommended. No other system software versions are supported."
So 7.5.3 is "recommended", but 7.1 is "supported". My question is: Does OT run
reasonably well under 7.1 or 7.5 on an 8 meg machine, given its fairly hefty
memory requirements, and how strong is that "recommendation" to use 7.5?
Is that just the standard "always recommend the latest version of the OS at
the time" kind of recommendation, or is there good reason to only use OT on
7.5 and above?
