There are several good sites that show doing a CD-ROM mod for an SE among others. I personally have done it on a Color Classic. All of those Compacts have more than enough room to install a full height CD-ROM drive. My biggest concern about using anything from a PowerBook is compatibility. As it has been pointed out to me on this list and others, PowerBooks use proprietary technology to incorporate all of their internals, meaning there may be support off the PB's logic board that allows the CD-ROM to work, which defeats it as a stand-alone. You'll also need to know all of the pinouts for the drive and how to tap into them. Plus, I don't think there are any SCIS slot-loading drives that you'll find in any PB. Several pre-slot-loading compact mods have done a nice job with tray-loading drives, but seriously, why would you mess up the beautifully designed lines of one of these Macs to do that when you could stick a slot-loader in there? Pioneer makes several good SCSI models which can usually be found inexpensively on ebay -- if you decide this is what you want to do I'll scrounge up some links for you. The easiest way to do it is to lose the internal floppy drive -- a slot-loader should fit right in the groove with only slight widening of the floppy slot and they look custom. The good news about the Classics is that they have a floppy port so if you ever need a floppy for some reason, you can add it with an external -- or just take off the back case bucket and plug your internal drive into the port you removed it from in a pinch -- there might even be room to mount it facing the rear, which is ugly as sin already, so one more hole won't matter much. The good news is, the Pioneer works with Apple's drivers and boots using the "c" key so you shouldn't ever need the floppy drive unless that's the only way you can get certain software.
