Surprised no one has taken interest into this topic.... I use HP servers, very nice. Generally like DL320 or DL360's work well.
You can use linux if you want but I use Windows Server Enterprise 2003 and love it. I have a SCSI card hooked up to a external tape drive and use Symantec Backup Exec software. All of the things I use have vendors that support their products in case something goes wrong with my system.
