I am going to try and clarify the situation.

You have a new Mac Pro, with Office 2008 Mac edition on it.

If you open Outlook then your Gmail is accessable from there with no
password? Correct?

If this is the case there are several things you can do. The first
would be to assign a screensaver password to your Mac Pro so that once
you go away from your desk your computer locks. The second thing you
can do is to set outlook 2008 to ask for your gmail password everytime
that it requests anything from Gmail, this solution can get quick
annoying at times.

Let me know if I have the situation correct, and we can try to get you
step by step instructions to set up a password.
