So let me start over. I know next to nothing about recording music to iPods. What is the best way to save cassettes/records to an external hard drive for future use (dubbing high quality to CD's), as well as put them into iPod/iTunes for listening.

I use AIFF. Great big files. Best for good sound, bad for disk space. MP3 is fine for iPods because they have limited sonic ability anyway as compared to large audio systems. AIFF or WAV is what you want for transcriptions from vinyl or other high quality sound sources. You can make MP3 files from AIFF or WAV.
