I just installed Office 2007 while keeping Office 2003. As I recall,
the installation forced an uninstall of only the Outlook 2003 and
migrated all of what was in Outlook 2003 into Outlook 2007. The rest
of the Office 2003 components coexist with the Office 2007.

I would think that you could run the same installation procedure and
then uninstall Office 2003 afterward if you didn't want it. I would
wait for a second opinion though, as I am not as dependent on Outlook
as you are.
