My only concern was the availability of the format.  Istockphoto, for example, 
looks like a lot of their stuff is .mov.  We're going to be drawing on a lot of 
pre-recorded clips.

Uh, no. The .mov files can be the output, not the input for FCP.

.mov files are simply MPEG4 files in a wrapper, similar to .avi. I have 
no problem with them in Windows, either.

The best basic format for Final Cut pro is .dv, which is the 
uncompressed format directly from videocams [good ones, at least]. The 
files are huge, but that makes them better for high quality output.
