Gmail labels are created in Settings>Labels. Or, if you have them displayed on the sidebar, just click "edit labels".
The trick to remember with Gmail is to set a filter for the new label: Matches: subject:([CGUYS]) Do this: Skip Inbox, Apply label "Cguys" If you skip the inbox, it works more like the old days of separate folders for emails.
