Chicken With Lime
(Tulsa World 2005.08.31)

1 pound boneless skinless chicken breast halves
1/4 teaspoon ground coriander
1 1/2 teaspoons lime juice
1/2 teaspoon basil
1/4 teaspoon pepper
1 1/2 tablespoons peanut oil, divided
1/2 medium onion, about 1/2 cup chopped
1 1/2 tablespoons minced fresh ginger
1 clove garlic, minced
1 cup long grain white rice
2 cups chicken broth

Trim all visible fat off chicken and cut into 1 inch cubes.
Sprinkle with coriander, lime juice, basil, and pepper.
Toss to distribute seasonings and set aside for 10 minutes.
Chop onion and mince ginger and garlic.  Set aside.
Heat 3/4 tablespoon of the oil in a large heavy nonstick skillet.
Add chicken cubes and stir fry until no longer pink, about 2 minutes.  Remove 
from pan.
Add remaining 3/4 tablespoon of the peanut oil.
Add onion and saute 2 minutes.
Stir in ginger, garlic and rice.
Cook and stir until rice turns white, about 2 minutes.
Stir in chicken broth, cover, and simmer 8 to 10 minutes.
Add chicken with accumulated juices.
Cover and continue cooking over low heat 4 minutes or until chicken is 
completely done and heated through.
Serve.
