SENSIBLY DELICIOUS DOUBLE CHOCOLATE CHIP BROWNIES Makes 24 brownies.
2 cups (12-ounce package) semisweet chocolate chips, divided use 1 cup granulated sugar 1/2 cup unsweetened applesauce 2 tablespoons butter 3 egg whites 1 1/4 cups flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon vanilla extract 1/3 cup chopped nuts (optional) To prepare oven, baking pan: Preheat oven to 350 degrees. Grease 9-by-13-inch baking pan. To make batter: In large, heavy saucepan, combine 1 cup chocolate chips, sugar, applesauce and butter. Melt over low heat, stirring until smooth. Remove from heat. Add egg whites. Stir well. Stir in flour, baking soda, salt and vanilla. Stir in remaining chocolate morsels and nuts. Spread into prepared baking pan. To bake brownies: Bake for 16 to 20 minutes or just until set. (Note: For very fudgy brownies, bake to minimum baking time.) Cool completely.
