Patty's MAPLE UPSIDE-DOWN CAKE An upstate New York dessert you'll never forget
3 tblsp. butter or margarine 1 c. maple sugar 1 c. pineapple chunks 3 eggs, separated 1 c.sugar 1/4 c. milk 1 tsp. lemon extract 1 c. sifted flour 1/2 tsp. salt 1 1/2 tsp. baking powder Melt butter in bottom of 8" round cake pan. Mix. in maple sugar; arrange pine apple chunks to cover bottom of pan. . Mix beaten egg yolks with sugar; add milk and extract, then dry ingredients sifted together. . Fold in stiffly beaten egg whites; pour batter over pineapple. Bake in moderate oven (350°) about 45 minutes. Invert and serve cut in wedges, garnished with unflavored whipped cream. Makes 6 servings.
