MAPLE PIE TOPPING
Sugar Country Treats

When the Indians taught our New. England forebears how to obtain sugar from 
maple trees, they started us on an adventure in good eating that continues 
to this day. Vermont is the foremost maple state, followed by New York and 
Ohio. But all New England and some other states produce maple sugar and 
syrup-their country kitchens are treasure-troves of intriguing recipes.

The universal use of maple syrup is as a companion to butter on pancakes and 
waffles, Some of the homespun ways with both the sugar and syrup are so 
simple you scarcely call them recipes-making cirinamon toast with maple 
sugar instead of granulated, and basting ham with maple syrup as it bakes. 
The maple recipes that follow are sugar country favorites.


At home on the Thanksgiving pumpkin pie

1 c. heavy cream
1/4 c. maple syrup

. Whip cream until it stands in soft peaks. Drizzle syrup over top and 
carefully fold into cream. Serve on cold squash or pumpkin pie.

Variation: Substitute molasses for maple syrup.
