Brown Sugar Fudge

 

Makes about 1 pound

 

2 tablespoons butter

2 cups packed brown sugar

1/4 teaspoon salt

3/4 cup light cream

3/4 cup sweetened coconut, chopped pecans, or chopped walnuts

 

Method

 

1. Butter a 9-inch square baking pan.

2. Set aside.

3. Melt butter in a large sauce pan over low heat.

4. Add the sugar, salt, and cream and cook, stirring, until the sugar has 
dissolved.

5. Cover, bring to a boil, and boil for 2 to 3 minutes.

6. Uncover and wash down the side of the sauce pan with a pastry brush dipped 

in cold water.

7. Continue to boil, without stirring, until the syrup reaches the soft ball 

stage, 234 degrees.

8. Remove from the heat and set aside.

9. Do not stir until the outside of the sauce pan is cool to the touch.

10. Then beat until creamy.

11. Add the coconut or nuts and stir to combine.

12. Press the fudge into the prepared baking pan.
