I've only made the pumpkin roll recipe, but 1 thing I can offer is the when you roll up the cake, you need to be sure you roll it up in a flour sack type towel, or some type of cloth that doesn't attract lint or hair. If you use a terry cloth type towel, sometimes any lint, pet hair if you have pets, or whatever can stick to the cloth will be transferred to the food. There are also pastry cloths you can buy used specifically for baking.
