Jan, in this recipe, did you mean quarts of potatoes? If so, how much do you
think that would mean? A 2 qt casserole isn't huge. I didn't find a mention
of ground beef in the ingredients list. Was that an error?

CREAMY POTATO CASSEROLE
1 1/2 quarts potatoes, cubed
1 teaspoon salt
2 tablespoons onions, chopped
1/2 teaspoon black pepper
1/2 cup sweet milk
3 ounces cream cheese
1/2 cup sour cream
1/2 cup cottage cheese
2 tablespoons onion, chopped
2 tablespoons green pepper, chopped
1 tablespoons butter or oleo grated cheese
Cook cubed potatoes in salty water until tender. (don't overcook). Butter
a 2 quart casserole and preheat oven to 350 degrees. Brown ground beef and
the
2 tablespoons onion in a 10 inch skillet. Add salt, pepper and sweet milk.
Simmer this mixture slowly while preparing remaining ingredients. Combine
softened
cream cheese, sour cream, onion and green peppers. Mix with potato cubes
and place in greased casserole. Dot with butter, pour meat mixture over
potato
mixture. Sprinkle grated cheese over casserole. Bake in preheated oven at
350 degrees for 30 minutes.
