Double Crust Streusel Surprise Apple Pie 1 package (15 ounces) refrigerated pie crusts 6 medium Granny Smith apples, cored and cut into 1/4-inch slices 1/4 cup butter 1/2 cup brown sugar, packed 1/4 cup granulated sugar 2 tablespoons brandy (optional) 1 tablespoon lemon juice 2 teaspoons vanilla 1 1/2 teaspoons cinnamon 1/4 cup flour 1/2 cup dried cranberries
Streusel Topping 1/2 cup chopped walnuts 1/2 cup almond brickle chips 1 cup brown sugar, packed 1 1/2 teaspoons cinnamon 2 tablespoons flour 1/4 cup butter, softened Preheat oven to 350 degrees. Line pie pan with one pie crust, trim edges and prick with a fork. Bake 10 minutes. Set aside. Meanwhile, make filling. In large sauté pan, melt butter and sauté apples, both sugars, brandy, lemon juice, vanilla, cinnamon, flour and dried cranberries until apples are soft but not mushy. Allow filling to cool while preparing streusel topping. To make streusel, combine all ingredients until mixture resembles coarse crumbs. Fill crust with filling. Top with streusel and remaining crust. Bake pie for 40 to 45 minutes or until golden brown. Cool before serving. Pie might not cut into perfect slices; you might need to use spoon.
