Shortbread Cookies
one pound unsalted butter
1 cup granulated sugar
pinch of salt
four cups all purpose flour
Oven temp: 350 degrees F.
Cream butter and sugar; add salt.
Then with hands, mix in the flour; do not add extra flour; you have to work the dough with your hands, and work it and work it till no longer sticky, and it holds together in a ball. Then knead it with your hands, and keep kneading, and it all should hold together; the longer it is kneaded, the better. Then drop by marble sized balls onto ungreased baking pans, and take a juice glass, dip it in granulated sugar, and press down each cooky very thin; Bake ten minutes.
Let stand on pan for 3 minutes, and remove to wire racks, enjoy!

Shortbread Cookies

½ cup icing sugar
1 tsp vanilla
¼ tsp salt

Soften butter and beat until foamy. Sift flour, corn starch and icing sugar
And salt in to butter. Beat well after each addition.
Add vanilla and beat again. Drop by spoonfuls on buttered cookie sheets and
bake at 300 for 30 minutes. Decorate before baking if desired.

I never bake these for 30 minutes. I bake them at 350 for 12 to 15 minutes.
