What's the point of rinsing? Is it just that it gets rid of a lot of the
grease?

You do precisely what I have been doing for years, first rinsing off the
browned and crumbled meat, then putting it back into the pot and adding the
other ingredients. Many ask if rinsing the ground beef alters the taste, no!
it truly! doesn't!!
