Hi Judy,
This is how I make the brunch casserole for family and friends. I sometimes make two, leaving the sausage out of one for vegetarians at our table. Enjoy!

Breakfast Casserole

      Based on "union Square Breakfast"
      from the Washington Post from December 18, 1996

1. In olive oil, saute 1 pound mushrooms, sliced; and 1 medium onion, chopped, for about 10 minutes. Remove veggies, and add to same skillet: 3/4 pound sweet Italian saussage. Cook until done. Drain, and mix with veggies.

2. In buttered 13"x9" baking dish, place 6 slices bread (crusts removed). Top with half the veggie/saussage mixture and 1 cup grated cheddar cheese. Then repeat the three layers.

3. Pour over all a mixture made of: 6 eggs, beaten; 2 1/2 cups milk; 1 Tbsp. dijon mustard;and grated nutmeg to taste.

4. Cover dish and refrigerate. The next day, remove cover and bake at 350 ( for one hour.
