BRUNCH EGG BAKE
3 cups shredded cheddar cheese 1 (4.5 oz) can sliced 
mushrooms, drained
1/2 cup chopped sweet red pepper 3 cups shredded mozzarella
1/3 cup sliced green onions 2 TB 
butter 8 eggs, beaten
1 3/4 cup milk 1/2 all purpose 
flour 2TB parsley
1/2 tsp dried basil 1/2 tsp 
salt 1/4 tsp pepper
2 cups diced cooked ham 

Combine cheese's: Place 3 cups of cheese in an ungreased 9X13 
casserole dish. Set aside. In medium skillet saute mushrooms, 
onions, peppers in butter until tender, drain. Place over cheese in 
casserole dish and top with ham and sprinkle with remaining cheese.
In a bowl, beat eggs, add milk, flour, parsley, basil, salt and 
pepper, mix well. Slowly pour over cheese. Bake at 350 for 35-40 
minutes or until knife comes out clean in center of casserole. Let 
stand 10 minutes before cutting. 12 servings
