Brownies are done when: a toothpick inserted comes out with a few crumbs clinging to it, or, when the edges pull away from the sides of the pan. Depending on the type of brownie you are making, a cake like or a fudge like brownie. Timing is a general guide line, but not foolproof. I learned this when I made a batch of brown sugar brownies and over baked them; they hardened to the consistency of cement and had to be chiseled out of the pan and thrown out. A lot depends on your oven; some ovens run hot, some cool, so if you can, check with an oven thermometer to see how the temperature is, related to the setting. You can then adjust accordingly. There is also a far less scientific way of knowing doneness; that is the nose. There is a certain smell when something is done; it is intuitive; you just know after a while.
