> 1/2 cup brown sugar > 1/4 cup butter, melted > 1 (20 oz.) can sliced pineapple > 6 Maraschino cherries > 2 cups flour > 1 1/2 cups sugar > 1/2 cup butter, softened > 1 1/4 cups milk > 2 teaspoons baking powder > 3/4 teaspoon salt > 2 eggs > 1/2 teaspoon vanilla Preheat oven to 350F. Sprinkle brown sugar in bottom of pan. Drizzle ¼ cup melted butter over brown sugar. Place one pineapple slice in each of > the indentations. Place one maraschino cherry in center of each > pineapple slice. In large bowl, combine remaining ingredients. Blend > at > low speed 1 minute, scraping bowl often. Beat on high speed 3 minutes, > scraping bowl occasionally. Pour batter over pineapple. Bake at 350° > for 50-55 minutes, until toothpick inserted in center comes out clean. > Immediately turn pan upside down onto serving plate. Serve warm.
