Another recipe I just made for the same event. DREAM BARS
Makes 3 dozen. Bottom layer: ½ cup (1 stick) butter ½ cup firmly packed brown sugar 1½ cups sifted flour Top layer: 3 eggs 1½ cups firmly packed brown sugar ¼ cup sifted flour 1 teaspoon baking powder ¼ teaspoon salt 1½ cups finely grated coconut 1 cup chopped nuts 1 teaspoon vanilla extract To prepare oven: Preheat oven to 350 degrees. To prepare bottom layer: In large bowl, cream butter. Gradually add sugar, creaming all the while. Work in flour until mixture resembles coarse crumbs. Pat firmly over bottom of ungreased 9- by 13- by 2-inch baking pan. Bake for 15 minutes. Set aside. To prepare top layer: In medium bowl, beat eggs until foamy. Gradually add brown sugar. Beat until thick. Sift together flour, baking powder and salt. Blend into egg mixture. Stir in coconut, nuts and vanilla. To bake bars: Spread over baked bottom layer. Bake for 25 to 30 minutes. Cool to room temperature in pan on wire rack.
