Leeks have to be cleaned thoroughly, so, cut off the leafy park and the root. Run the trimmed leeks under cold water, making sure there is no sand in them. Then, slice thin, and sauté in butter or olive oil. They are good with onions, in a leek and potato soup, or any other vegetable soup. You can also make a nice cream of broccoli soup by sautéing them with onions, adding chicken broth, then cook some broccoli in this mixture. When it is done, make a roux with flour and butter, add milk to make a white sauce. Add this to the broccoli mixture and puree in a blender. It makes a lovely soup.
