Cabbage and Rice (Lahanorizo)

1/4 cup olive oil
3 cups chopped cabbage
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup tomato paste
2 1/2 cups water
1 cup rice
2 teaspoons chopped parsley

Heat olive oil in a large pot over medium heat. Add cabbage, salt and
pepper, and saute 20 minutes until cabbage is tender. Stir in tomato paste
and water, and bring to a boil.

Add rice, and reduce heat to medium low. Cover and cook about 20 minutes
until rice is done. Just before serving, stir in chopped parsley.

Makes 6 servings.

milligrams; carbohydrate, 29 grams; fiber, 2 grams; protein, 3 grams;
sodium, 482 milligrams
