ZUCCHINI PIE Recipe

?   3 c. shredded zucchini (drained)
?   1 1/2 to 2 c. sugar
?   3 eggs
?   4 tbsp. flour
?   2 tsp. cinnamon
?   2 tsp. vanilla
?   Unbaked pie shell
?   Nutmeg to taste
?   Coconut to taste

Blend together zucchini, sugar, eggs, Milnot, flour, salt, cinnamon and 
vanilla. Pour into deep unbaked 9 inch pie shell or 8 inch pie shell. Sprinkle 
nutmeg and coconut over top of pie. Bake 350 degrees until knife inserted in 
center comes out clean and top of pie is lightly browned, about 50 to 60 
minutes. Keep refrigerated. 

Serves 8.
