Pork with Mustard Sauce

4 ctr. cut pork chops (aprox. 2lbs)
2 Tbsp. butter
Salt and Pepper to taste
2-3 Tbsp Dijon Mustard
1 sm. chopped onion
1/2 tsp dried Tarragon (1 1/2 tsp. fresh)
3/4 cup lite Sour Cream (not Fat Free)
optional 1 tsp. "Kitchen Bouquet"
2 cups cooked rice or 3 cups noodles, cooked

Season chops on both sides with salt and pepper; brown on both sides 
with butter.

Add mustard, onion, and tarragon.

Cover and simmer 10-12 minutes.

Place hot rice or noodles on a platter & arrange chops on top.

In the skillet add sour cream and browning sauce, heat through but do not boil.

Pour over chops and rice or pasta. May garnish with parsley sprigs.
