Mom's Easy Fruit Salad
Serves 8 1 can pineapple chunks, in juice 2 cans Mandarin oranges, in juice 1 jar maraschino cherries, without stems 1 pkg. French Vanilla pudding (not instant, use cook & serve type) 1 - 2 bananas Drain pineapple juice into a measuring cup. You will need 1 c. of juice. If you do not get 1 c. of juice from the pineapple can, use juice from the mandarin oranges to get a full cup. After you have 1 c. juice set it aside. Then drain all fruit. Put ALL the fruit in a large bowl. Mix the 1 c. juice with the vanilla pudding in a microwave safe bowl. Microwave for 3 minutes. Stir between each minute. At the end of 3 minutes when the mixture is thick, pour it over the fruit. If mixture is not thick, continue to microwave it at 1 minute intervals until it thickens. This sometimes happens due to variances in microwaves. Refrigerate fruit for several hours before serving.
