Chocolate Chip Mini Meringues

3 egg whites
pinch salt
3/4 cup granulated sugar
1 tsp vanilla extract (almond is actually preferable)
a touch less than 1/2 tsp lemon juice
3/4 cup mini semi-sweet pieces
2/3 cup powdered sugar

Preheat oven to 275. Line a cookie sheet with foil, dull side up. Beat
whites till foamy. Add salt. Beat to stiff peaks while slowly adding
granulated sugar, vanilla, and lemon juice. Fold in chocolate. Drop batter onto cookie sheet by scant teaspoons, 2 inches apart. Sift powdered sugar over top. Bake 35-40 minutes until tops are barely pale and meringue is firm. Cool completely on wire rack. Store tightly covered at room
temperature.
