CHOCOLATE-PEANUT BUTTER PUDDING
1/4 c. sugar
1/4 c. unsweetened cocoa powder
3 tbsp. cornstarch
2 c. skim milk
1/2 c. peanut butter
1 tsp. vanilla
1 banana, sliced
In a medium saucepan, combine the sugar, cocoa powder, cornstarch. Stir together
milk, peanut butter. Cook and stir over medium heat until thickened and bubbly. 
Cook
and stir 2 minutes more. Remove from heat. Pour into a bowl. Cover surface with 
plastic
wrap. Chill until set or up to 24 hours.
To serve, spoon half of the pudding into 4 individual dessert cups; top each 
using
half of banana. Spoon remaining pudding over bananas; arrange remaining banana 
slices
on top. Serve immediately. Makes 4 servings.  Enjoy.
