Marilyn, when I layer my cakes I slice off the top part that is rounded so
when I place the top layer on it is flat and more sturdy. I have also sliced
two round cakes down the middle and made four layers. The knife I use is a
serrated large bread knife. Remember Icing is our friend it hides mistakes.

I divide the batter in half for a two-layer cake. Once I have the batter
in
the pans, I tap them on the counter and smoothe them gently to even them
out.
