Oven Fried Chicken (with variations) 1 tablespoon butter or margarine 2/3 cup Bisquick Baking Mix 1 1/2 teaspoons paprika 1 1/4 teaspoons salt 1/4 teaspoon pepper 2 1/2 to 3 1/2 pounds broiler fryer chicken, cut up Heat oven to 425 degrees. Heat margarine in rectangular pan, 13 by 9 by 2 inches, until melted. Mix baking mix, paprika, salt and pepper; coat chicken. Place chicken, skin side down, in pan. Bake uncovered 35 minutes. Turn; bake until done, about 15 minutes longer. Variations: Italian Coating: Add 1 tablespoon Italian seasoning and 1/2 teaspoon garlic powder. Mexican Coating: Decrease baking mix to 1/2 cup. Add 2 tablespoons cornmeal and 1 to 2 tablespoons chili powder. Parmesan Coating: Decrease baking mix to 1/3 cup and salt to 1 teaspoon. Add 1/2 cup grated Parmesan cheese. Sesame Herb Coating: Decrease salt to 1 teaspoon. Add 2 tablespoons sesame seed and 2 teaspoons dried thyme leaves, 2 teaspoons ground sage and 2 teaspoons parsley flakes. Makes 6 servings.
