Claudia, make sure that you only spread a little butter on the outsides of the bread. Too much will keep the sandwich too soft and moist.

Then grill each side until you feel with the spatula that the under side of the bread is firm and sounds crispy.

And another suggestion would be that, instead of actually grilling the sandwich after buttering the outsides, put the sandwich under the broiler for a minute or two on each side.

Either of these suggestions should make your sandwich nice and crunchy.
