Marilyn,

I have wanted this recipe for a long time. I use to eat these wonderful
little cupcakes when I lived in Pa. Being a novice baker, how would I make
regular sized cup cakes out of this recipe?

Thanks.

BLACK BOTTOM CHOCOLATE CHIP CUPCAKES

(MINIATURES)

First Mix:

8 oz. pkg. of cream cheese, room temperature

1 beaten egg

1/3 c. sugar

1/8 tsp. salt

Combine these ingredients. Mix well and stir in 1 package (12 oz.) chocolate
chips,

then set aside. Sift together:

Second Mix:

1 1/2 c. flour

1/2 tsp. salt

1 c. sugar

1/4 c. cocoa

1 tsp. baking soda

Add and beat well to sifted mixture:

Third Mix:

1 c. water

1/2 c. cooking oil

1 tbsp. vinegar

1 tsp. vanilla

Then fill miniature cupcake inserts 1/2 full with the second mix. Drop 1
teaspoon

of first mixture on top of each. Bake at 350 degrees for 20 minutes. Makes 4
dozen

miniature cupcakes.

DIETITIAN'S NOTE:

They say great things come in small packages! You can make the number of
calories

"smaller" by using light cream cheese in mix #1 and reducing the sugar in
mix #2

to 2/3 cup. The salt in both mixes can also be omitted without altering
these tasty,

tiny treats. Enjoy.
