I just made a variation of this when I was visiting my family in NY. I did
not use the ham, but added sliced fresh tomatoes on top about 5 minutes
before the cooking time was up. Everyone loved it.
Oven Omlet
8 Eggs
1/2 Cup Half and half cream (I used whole milk)
1 Cup Shredded Cheddar Cheese
1 Cup Ham, finely chopped and fully cooked
1/4 Cup Green Pepper, finely chopped (did not use)
1/4 Cup Onion, finely chopped (used 1/2 cup onion)
a. In a bowl, beat the eggs and cream until light and fluffy.
b. Stir in the cheese, ham, green pepper and onion.
c. Pour into a greased 9 inch baking dish.
d. Bake at 400 degrees 20 to 25 minutes (or until golden brown).
e. Yields 4 to 6 servings
PS: I think that just about anything you want to add would be good in this.
like mushrooms, vegies, etc.
