Usually the unturned ones are dryer on the top. Also I arrange mine in a
grid pattern so that if they are to hot to touch I can still use a spatula
and fork to locate them. If I am cooking a large meal I put a tooth pick in
every piece of meat when I start cooking. Then when I turn them over I take
the Tooth pick out.
