I just got this recipe today and I thought it sounded good and wanted to share.



Aunt Ida's Apple Cranberry Kugel(Noodle Pudding)

 

1 12 ounce package egg noodles

3/4 cup butter, melted

1/2 cup sugar, divided

2 teaspoons cinammon, divided

4 large eggs

1 1/2 cups pineapple juice

3  large apples peeled, cored, and sliced about 1/4 inch thick. 

1 16 ounce whole cranberry sauce

3/4 cup toasted walnuts, chopped

Topping:

2 tablespoons butter, melted

1/2 cup toasted walnuts, chopped

1/4 cup firmly packed brown sugar

Preheat oven to 350 degrees f. and set oven rack in middle position.

Butter a 9 by 13 inch glass ovenproof baking dish .

 

Cook noodles in a large pot of boiling water for 6 to  minutes, or until just 
tender.

Drain noodles and rinse under cold running water.Place noodles  in a large bowl.

Add melted butter, 1/4 cup sugar and 1 teaspoon cinammon.Whisk eggs

with the pineapple juice to blend, add to the noodles and stir to combine.

Mix remaining teaspoon cinammon with remaining 1/4 cup sugar and toss with 
apples in a nother bowl.

Spread half the noodles in the prepared dish, add all of the apples in an even 
layer, spread cranberry sauce over the apples, then layer remaining noodles on 
top.Sprinkle evenly with  walnuts.

 

To make the topping toss melted butter With walnuts  to coat, scatter on top of 
the pudding then sprinkle with brown sugar.  Enjoy.
