I have been making these "oven pancakes" for my family for many
years. They turn out very puffy and delicious -- almost like a
flattened version of a popover -- and the batter, itself, is very
reminiscent of that for popovers. I don't know that these will be
healthier, but they are delicious! You can serve with butter and
maple syrup, or top with sauteed apples and pears and marscapone
cheese, or dust with confectioners' sugar. Whatever you decide to
top them with, eat them as soon as they come from the oven -- the
easiest way is to cut into wedges.

OVEN PANCAKE
I think this is the recipe my Aunt Doris used to make her "Jane Eyre"
pancake. I have also seen it called ,"Dutch Baby;" and I have seen
variations which include grated apple. Serve topped with
confectioner's sugar and freshly grated nutmeg, along with fresh
fruit in season.
1. In a 10-12" iron skillet, melt 3 Tbsp. butter in oven which
has been preheated to 425.
2. Meanwhile, combine in blender container:
3 eggs;
6 Tbsp. flour;
1 Tbsp. granulated sugar; and
6 Tbsp. milk.
Blend until smooth.
3. When butter has melted (before it burns), tilt the pan to
coat bottom and sides, then pour in the batter. Return pan to oven
and bake pancake for 15 minutes. Serve, piping hot, topped and
accompanied as desired.
QUICK OVEN PANCAKE FOR RUSHED-MORNING BREAKFASTS
This version of the more complicated oven pancake above is just right
for rushed mornings when you have to get the kids out the door to
catch the school bus, in a hurry. A safety patrol who has to get to
her bus stop earlier than everyone else can even carry along wedges
of this pancake to munch while she waits at the bus stop!)
1. Preheat oven to 425. (You can do this when you first get
up and turn on the coffee pot!) While you whisk together the pancake
batter, melt 3 Tbsp. butter in a cast-iron skillet, either in the hot
oven or over low heat on top of the stove.
2. In mixing bowl, combine with whisk:
2 eggs, beaten;
1/2 cup flour;
1/2 cup milk;
A grating of fresh nutmeg; and
A pinch each of sugar and salt.
3. Swirl the skillet to coat it well with the melted butter,
and pour in the batter. Place immediately in hot oven, and bake for
15 minutes.
4. Serve wedges of this pancake sprinkled with confectioner's sugar.

Hi all,
I know that is unusual since pancakes are traditionally made in
skillets and pans. However, because of health concerns, I want to
stick to healthy stuff, and make it as fun as possible. Now with that
in mind, does anyone have a recipe that they have tried before that
calls for baking the pancakes? I would really appreciate it! Thanks!
