Here's a savory sweet potato recipe, and very easy. Take as many sweet potatoes as you want, and wash and dry them. Cut off the tiny ends, and carefully cut the potatoes into rounds about a half inch thick. Dip each round into a little dish of olive oil on both sides, and place the rounds in a single layer on a baking sheet (put foil on the baking sheet for an easy cleanup). Sprinkle the rounds with salt, black pepper, and rosemary (fresh or dried). If you like, scatter unpeeled cloves of garlic on top of the rounds. Bake at 375 degrees until soft, about 20 minutes or so. Very savory and delicious! best, Nancy
