Corn Bread Dressing

1/2 cup melted margarine

1 cup chopped onion

1 cup chopped celery (about 3 ribs)

1 cup loaf bread crumbs

6 cups crumbled corn bread

1 cup saltine cracker crumbs

1 1/2 cups cooked grits

3 cups brolth

3 eggs, slightly beaten

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon poultry seasoning.

Preheat oven to 450 degrees. In a large skillet over medium heat, heat the

butter and saute the onion and celery until soft, about 10 minutes. In a large

bowl, combine the bread crumbs, corn bread, cracker crumbs, grits, broth and

eggs. Add cooked onion and celery, salt, pepper and poultry seasoning, and

mix well. Pour into a 2 1/2 quart greased baking dish and bake until born and

firm, about 30 to 40 minutes. 6 servings.

Note: For the broth you can use liquid from the boiling of the chicken. For

the soup/gravy for the dressing I sometimes use a can of cream of chicken

soup and only add 1/2 can of water to it.
