Icebox cookies
 
1/2 cup butter, softened
1 cup packed brown sugar
1 egg, beaten
1/2 teaspoon vanilla
2 cups flour
1/2 teaspoons baking soda
1/2 teaspoon cream of tartar
1/2 teaspoonp salt
1 cup chopped walnuts, optional
 
In a large bowl, cream the butter and brown sugar.  Add the egg and vanilla.  
Beat well.  Combine the dry ingredients.  Add to the creamed mixture.  Stir in 
the nuts, if desired.  On a lightly floured surface, shape the dough into two 
10-inch rolls.  Wrap each in plastic wrap.  Freeze for at least 12 hours.  
Unwrap and cut into 3/8 inch slices.  Place 2 inches apart onto greased baking 
sheets.  Bake at 350 F for 6-8 minutes.  Remove to wire racks to cool.    Makes 
about 7 dozen
