Apple-Cinnamon Muffin Mix In A jar
Start to Finish: 15 minutes
Ingredients
1-1/3 cups all-purpose flour
1-1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2/3 cup packed brown sugar
3/4 cup regular rolled oats
1/2 cup snipped dried apples
1/2 cup chopped walnuts, toasted
Directions
1. In a 1-quart jar, layer ingredients in the following order: flour, baking
powder, salt, baking soda, cinnamon, nutmeg, brown sugar, oats, sugar, dried
apple, and walnuts. Seal; store in a cool, dry place for up to 1 month. Makes
12 muffins.
2. To make muffins: Preheat oven to 400 degrees F. Grease twelve 2-1/2-inch
muffin cups or line muffin cups with foil or paper bake cups; set aside. In a
large bowl, combine one egg, 3/4 cup buttermilk, 1/3 cup cooking oil, and 1
teaspoon vanilla. Add muffin mix from jar; stir just until moistened (batter
should be lumpy). Spoon batter into prepared muffin cups, filling each cup
three-fourths full. Bake about 20 minutes or until toothpick inserted in
centers comes out clean. Cool in muffin cups on wire rack for 5 minutes. Remove
from muffin cups. Serve warm. Enjoy.
