You are ahead of me with the baking; I haven't started mine yet, but plan to 
this week.  I've made a similar recipe for Pecan Butter balls.  The dough is 
stiff and crumbly, but does form into balls with a little patience.  If you are 
uncomfortable with the consistency of the dough, try adding about two teaspoons 
of cold water.  That should do the trick.

By the way, you can buy cookie scoops of different sizes which help to make 
uniform cookies.  They would be available in a kitchen store; they look like 
small ice cream scoops, with a spring release to scrape the dough from them.
