Hi,

I'd like to make these cookies, but I don't have lemon extract.
Could I use lemon juice instead, or would that change the recipe significantly?

CAKE MIX COOKIES

You can make cookies from any flavor of boxed cake mix. Just add 1/2 cup of
oil, 2 eggs, 1 tablespoon water and 1 to 2 teaspoons of any flavor of
extract. Mix well with an electric mixer, roll into 1-inch balls, flatten
onto an ungreased cookie sheet and bake for 8 to 10 minutes at 350 F. Get
creative with the flavor choices.

For example, 2 teaspoons of lemon extract with a yellow cake mix for Lemon
Cookies. When cooled, dust them with powdered sugar. Or add 2 teaspoons of
vanilla extract to a white cake mix for a delicious sugar cookie. How about
2 teaspoons of mint extract and a chocolate cake mix? Add white chocolate
chips to a strawberry cake mix for a unique result. I often find cake mixes
for as little as 75 cents each (although it's wise to stick to major brands
such as Duncan Hines, Betty Crocker and Pillsbury when making this recipe).
The cost of oil, eggs and extract is minimal. This cookie dough, once mixed,
can be frozen for baking later. Just roll into a "log," cover tightly with
plastic wrap and then slice what you need and bake.
