I'm no expert here, but have made the exact cookies you're talking about, and always used lemon juice. I think because I didn't have a recipe, just threw it together one day. I make my cookies and then either dust them with confectioners sugar or regular granulated sugar. They turned out very good. I have used both a yellow cake mix and a lemon cake mix, the lemon was almost a little strong for me but this would depend on your taste. Best of luck.
